2 cups cooked pumpkin or I used a 15 oz can of pumpkin.
2 cups white sugar
1 cup oil
2 eggs
4 cups flour
4 teaspoons baking powder
2 teaspoons cinnamon
1 teaspoon salt
2 teaspoon baking soda dissolved in 2 teaspoons of milk
2 teaspoons vanilla
2 cups chocolate chips
Combine pumpkin, sugar, oil, and eggs and stir.
Stir in flour, baking powder, soda, salt and cinnamon. Mix well.
Stir in chips and vanilla.
Drop by teaspoon full on lightly greased cookie sheet. Bake at 375 degree for 10 minutes.

I just made these last week! Did your cookies turn out more crunchy or chewy? Mine were wayyyy chewy (like the top of a muffin, almost) and I can't decide if I liked the texture or not.
ReplyDeleteMine were actually more muffin like as well, but I love them that way. :) Bill on the other hand is a crunchy cookie guy so these weren't his favorite, but he agreed that the flavor is awesome. :)
